Tamarind Glazed Lamb Riblets
Lamb ribs
cup Salt
2 T fresh ground black pepper
cup Raz el hanout
Foil and plastic wrap

Mix all seasoning together. Generously season the rib racks. Wrap well in plastic wrap then in aluminum foil. Bake in a 300 degree oven for 2 hours. Let cool. Unwrap and cut into individual ribs. Coat with glaze put in a deep baking dish cover with foil and bake in the oven at 350 degrees for hour then remove foil and let brown lightly. Serve with fresh chopped cilantro


Tamarind glaze
2 quarts water
1 block tamarind paste
1 cup brown sugar
1 cinnamon stick
2 star anise
1 tsp toasted cumin seed
cup molasses
1 T finely chopped and peeled ginger root
tsp chili flakes
cup fresh lemon juice
1 ea clove

Put all ingredients in a thick bottomed pot. Bring to a boil and let simmer for 1 hours. Strain through
